I tried this recipe from www.aspicyperscpective.com and it was amazing! This recipe is vegetarian, vegan, and gluten free. Although I am neither of those things, I can appreciate good ways of sneaking more vegetables into my diet. This "Cauliflower Rice" is a brilliant and simple way to trick yourself into thinking you're eating actual rice. I found it had the same texture and flavour as actual white rice.
